I love pancakes and when I first thought in go plant based food I got a bit worried in how to make delicious pancakes that could hold well without eggs in the mixture. I tried a few and one of favourites are those made with banana and cinnamon, those simply taste delicious for the morning breakfast and they are actually fulfilling.

Banana cinnamon pancakes

Ingredients:

Serve: 8 – 10 small thin pancakes

  • 2 chia eggs (mix 2 tbsp of milled chia in 4 tbsp of water)
  • 1/2 cup of gluten free flour
  • 1 ripe banana
  • 1/2 cup of coconut milk (or any other non-dairy milk)
  • 1 tbsp of baking powder
  • 1 teaspoon of cinnamon
  • Oil for cooking (I use coconut oil)

You can also use self-raising gluten free flour.

My toppings are banana slices with peanut butter and chia seeds.

Instructions:

  1. First things is to make our chia eggs, I use my Nutrininja blender to ground my chia and I leave in the refrigerator for 10 minutes mixed with 4 tbsp of water.
  2. When the chia eggs are ready, I start combining everything in a bowl. First I sift my flour and baking powder to stir them together. I mash the banana leaving few slices to use for decoration, then I put all the other ingredients except the oil for cooking and mix well.
  3. The consistency is a bit thick, but you can add extra 1/4 cup of milk to soften.
  4. Heat a small frying pan, add your oil for cooking, when it heated up start pouring your mixture to form the pancakes, let it cook until golden a little, flip it over and cook for another minute or until golden. Repeat the process with the rest of the mixture.
  5. finally, add your toppings and enjoy your pancakes!
